In conjunction with Wheaton Franciscan Healthcare, Eileen is writing a book of comforting foods for those people diagnosed with cancer and undergoing treatments. She has spent time in kitchens in California and has recently been accepted to an advanced culinary program for professional chefs in Lucca, Italy.
Prior to training as a chef, Eileen was a full time faculty member at the Medical College of Wisconsin. She has practiced as a critical care nurse in Boston, Massachusetts. She lives in Mequon, WI, and has experience caring for retired show horses. Eileen’s philosophy of cooking is very simple; “Buy the best quality ingredients you can, keep it simple and have some fun! Make food choices a priority that will allow you to Live To Eat and experience the delight of foods over and over again!”
